Irresistible Traditional Irish Colcannon Recipe featuring creamy mashed potatoes blended with tender cabbage and green onions in a classic Irish side dish.

Ingredients

Scale

2 pounds Russet or Yukon Gold potatoes peeled and chopped
3 cups finely shredded green cabbage or chopped kale
4 tablespoons unsalted butter divided
1/2 to 3/4 cup warm whole milk
3 green onions sliced
1 teaspoon salt
1/2 teaspoon black pepper

Instructions

  • Boil potatoes in salted water until tender.

  • Sauté cabbage or kale in butter until softened.

  • Drain potatoes and mash until smooth.

  • Stir in warm milk and remaining butter.

  • Fold in greens and green onions.

  • Season with salt and pepper.

  • Serve hot with extra butter if desired.

Notes

Warm the milk before adding to keep the mash smooth and fluffy.
