1 pound salmon fillet, cut into bite-sized pieces
1/2 cup panko breadcrumbs (optional)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked rice or mixed greens
1/2 cup shredded carrots
1/2 cup cucumber, thinly sliced
1/4 cup red cabbage, shredded
1 avocado, diced
2 tablespoons sesame seeds
2 green onions, chopped
Bang Bang Sauce:
1/3 cup mayonnaise
3 tablespoons sweet chili sauce
1–2 teaspoons sriracha
1 teaspoon lime juice

Preheat oven to 400°F. Toss salmon bites with olive oil, salt, pepper, and panko if using. Bake 12–15 minutes or sear until cooked through.
Mix bang bang sauce ingredients in a small bowl. Adjust spiciness.
