BBQ Chicken Skewer Salad features smoky barbecue-glazed chicken served over crisp greens with fresh vegetables and a light lime dressing.

Ingredients

pounds boneless skinless chicken thighs
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
½ cup barbecue sauce
6 cups chopped romaine lettuce
1 cup cherry tomatoes, halved
1 cup grilled corn kernels
¼ red onion, thinly sliced
1 avocado, diced
2 tablespoons chopped cilantro
For the dressing:
3 tablespoons olive oil
1 tablespoon lime juice
1 teaspoon Dijon mustard
1 teaspoon honey
Pinch of salt and pepper

Instructions

  • Toss chicken with olive oil and seasonings.

  • Thread onto skewers.

  • Grill 4–5 minutes per side.

  • Brush with barbecue sauce during final minutes.

  • Rest chicken and remove from skewers.

  • Arrange salad ingredients in a bowl.

  • Whisk dressing ingredients and drizzle over salad.

  • Top with grilled chicken and cilantro.

Notes

Add barbecue sauce toward the end of cooking to prevent burning. Store dressing separately for meal prep.
