BBQ Chicken Skewer Salad features smoky barbecue-glazed chicken served over crisp greens with fresh vegetables and a light lime dressing.
1½ pounds boneless skinless chicken thighs
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
½ cup barbecue sauce
6 cups chopped romaine lettuce
1 cup cherry tomatoes, halved
1 cup grilled corn kernels
¼ red onion, thinly sliced
1 avocado, diced
2 tablespoons chopped cilantro
For the dressing:
3 tablespoons olive oil
1 tablespoon lime juice
1 teaspoon Dijon mustard
1 teaspoon honey
Pinch of salt and pepper
Toss chicken with olive oil and seasonings.
Thread onto skewers.
Grill 4–5 minutes per side.
Brush with barbecue sauce during final minutes.
Rest chicken and remove from skewers.
Arrange salad ingredients in a bowl.
Whisk dressing ingredients and drizzle over salad.
