Ingredients

6 boneless skinless chicken thighs
2 tablespoons olive oil
3 cloves garlic minced
1 shallot chopped
1 pound baby potatoes halved
2 carrots sliced
1 cup green beans trimmed
1 cup chicken broth
1 teaspoon fresh thyme leaves
1 tablespoon fresh parsley chopped
1 tablespoon fresh lemon juice
Salt and black pepper to taste

Instructions

  • Preheat oven to 400°F.

  • Season chicken with salt and pepper.

  • Sear chicken in olive oil 4 to 5 minutes per side then remove.

  • Add potatoes and carrots to skillet and cook 5 minutes.

  • Stir in garlic and shallot briefly.

  • Pour in chicken broth and thyme scraping pan.

  • Return chicken to skillet and transfer to oven.

  • Roast 20 to 25 minutes until chicken reaches 165°F.

  • Add green beans during final 5 minutes.

  • Rest briefly then finish with lemon juice and parsley.
