6 boneless skinless chicken thighs
2 tablespoons olive oil
3 cloves garlic minced
1 shallot chopped
1 pound baby potatoes halved
2 carrots sliced
1 cup green beans trimmed
1 cup chicken broth
1 teaspoon fresh thyme leaves
1 tablespoon fresh parsley chopped
1 tablespoon fresh lemon juice
Salt and black pepper to taste
Preheat oven to 400°F.
Season chicken with salt and pepper.
Sear chicken in olive oil 4 to 5 minutes per side then remove.
Add potatoes and carrots to skillet and cook 5 minutes.
