Ingredients

2 cups canned chickpeas, rinsed and drained
1 avocado, diced
1 cup cherry tomatoes, halved
1 cup diced cucumber
¼ cup finely chopped red onion
½ cup crumbled feta cheese
2 tablespoons olive oil
1 tablespoon lemon juice
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped parsley

Instructions

  • Rinse and drain the chickpeas.

  • Dice avocado, cucumber, and tomatoes.

  • Combine chickpeas, avocado, tomatoes, cucumber, and onion in a bowl.

  • Add crumbled feta cheese.

  • Whisk olive oil, lemon juice, salt, and pepper.

  • Pour dressing over salad and toss gently.

  • Sprinkle parsley on top and serve.

Notes

Add avocado just before serving to keep the salad fresh and vibrant.
