Colcannon is a traditional Irish recipe featuring creamy mashed potatoes blended with tender cabbage or kale and finished with butter and green onions.
2 pounds russet or Yukon Gold potatoes peeled and chopped
3 cups finely shredded green cabbage or chopped kale
4 tablespoons unsalted butter divided
1/2 to 3/4 cup warm whole milk
3 green onions sliced
1 teaspoon salt
1/2 teaspoon black pepper
Boil potatoes in salted water until tender.
Sauté cabbage or kale in butter until softened.
Drain potatoes and mash until smooth.
Stir in warm milk and remaining butter.
Fold in cabbage and green onions.
Season with salt and pepper.
Serve hot with extra butter if desired.
Drain potatoes thoroughly before mashing to prevent excess moisture.
