Ingredients

Scale

2.5 lbs bone-in, skin-on chicken thighs
2 lbs Yukon Gold potatoes, chopped into chunks
6 cloves garlic, minced
1 cup heavy cream
¾ cup freshly grated Parmesan cheese
¾ cup low-sodium chicken broth
3 tbsp unsalted butter
2 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
Fresh parsley, for garnish (optional)

Instructions

  1. Pat chicken thighs dry and season with salt, pepper, and half of the Italian seasoning.

  2. Optional: Sear chicken in a hot skillet with 1 tbsp butter until golden.

  3. In the same pan, melt remaining butter. Sauté garlic for 1–2 minutes.

  4. Add chicken broth and cream, then stir in Parmesan until melted.

  5. Place potatoes in bottom of Crockpot. Add chicken on top.

  6. Pour sauce over everything and sprinkle with remaining seasoning.

  7. Cover and cook on Low for 6–7 hours or High for 3–4 hours.

  8. For thicker sauce, remove lid in last 30 minutes or add cornstarch slurry.

  9. Garnish with parsley and extra cheese before serving.

Notes

Optional searing adds flavor but is not required.
Red potatoes or coconut cream can be used as substitutions.
