A savory, cheesy breakfast casserole packed with bacon, hash browns, eggs, and cream cheese. Easy to prep and totally addictive.
8 large eggs
4 cups frozen shredded hash browns, thawed
1 lb bacon, cooked and crumbled
2 cups shredded cheddar cheese
4 oz cream cheese, softened
1 cup milk or half-and-half
½ cup chopped green onions
½ tsp salt
½ tsp black pepper
¼ tsp garlic powder (optional)
Preheat oven to 350°F. Grease a 9×13-inch baking dish.
Cook bacon until crispy. Crumble and set aside.
In a bowl, whisk eggs, milk, salt, pepper, and garlic powder.
Stir in cream cheese, cheddar, green onions, and bacon.
Layer hash browns in baking dish. Pour egg mixture over top.
Bake 30–35 minutes until golden and set.
Let rest 5–10 minutes before serving.
Customize with sausage, veggies, or different cheeses. Freezes well in portions.
