A savory, cheesy breakfast casserole packed with bacon, hash browns, eggs, and cream cheese. Easy to prep and totally addictive.

Ingredients

8 large eggs
4 cups frozen shredded hash browns, thawed
1 lb bacon, cooked and crumbled
2 cups shredded cheddar cheese
4 oz cream cheese, softened
1 cup milk or half-and-half
½ cup chopped green onions
½ tsp salt
½ tsp black pepper
¼ tsp garlic powder (optional)

Instructions

  • Preheat oven to 350°F. Grease a 9×13-inch baking dish.

  • Cook bacon until crispy. Crumble and set aside.

  • In a bowl, whisk eggs, milk, salt, pepper, and garlic powder.

  • Stir in cream cheese, cheddar, green onions, and bacon.

  • Layer hash browns in baking dish. Pour egg mixture over top.

  • Bake 30–35 minutes until golden and set.

  • Let rest 5–10 minutes before serving.

Notes

Customize with sausage, veggies, or different cheeses. Freezes well in portions.
