Creamy Gnocchi with Spinach and Feta is a comforting pasta dish featuring soft gnocchi, tender spinach, and tangy feta cheese in a creamy sauce.

Ingredients

1 pound potato gnocchi
2 cups fresh spinach
2 tablespoons olive oil
3 cloves garlic, minced
¾ cup heavy cream
½ cup vegetable broth
½ cup crumbled feta cheese
¼ cup grated Parmesan cheese
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon Italian seasoning

Instructions

  • Cook gnocchi in salted boiling water until they float, then drain.

  • Heat olive oil in a skillet and sauté garlic until fragrant.

  • Add spinach and cook until wilted.

  • Stir in vegetable broth and cream and simmer briefly.

  • Add Parmesan cheese and mix until melted.

  • Add cooked gnocchi and toss to coat in sauce.

  • Sprinkle feta cheese and seasonings and cook briefly before serving.

Notes

Add a squeeze of lemon juice before serving for extra brightness.
