Ingredients

1 pound potato gnocchi
2 tablespoons olive oil
3 cloves garlic minced
1 cup vegetable or chicken broth
3/4 cup half-and-half or light cream
3 cups fresh baby spinach
1/2 cup crumbled feta cheese
1 tablespoon fresh lemon juice
Salt and black pepper to taste

Instructions

  • Heat olive oil and sauté garlic briefly.

  • Add gnocchi and cook 2 to 3 minutes.

  • Pour in broth and simmer 4 to 5 minutes.

  • Stir in cream and cook until slightly thickened.

  • Add spinach and cook until wilted.

  • Remove from heat and fold in feta and lemon juice.

Notes

Do not overcook gnocchi. Add extra broth when reheating to maintain creaminess.
