1 pound potato gnocchi
2 tablespoons olive oil
3 cloves garlic minced
1 cup vegetable or chicken broth
3/4 cup half-and-half or light cream
3 cups fresh baby spinach
1/2 cup crumbled feta cheese
1 tablespoon fresh lemon juice
Salt and black pepper to taste
Heat olive oil and sauté garlic briefly.
Add gnocchi and cook 2 to 3 minutes.
Pour in broth and simmer 4 to 5 minutes.
Stir in cream and cook until slightly thickened.
Add spinach and cook until wilted.
Remove from heat and fold in feta and lemon juice.
Season and serve warm.
Do not overcook gnocchi. Add extra broth when reheating to maintain creaminess.
