Creamy Keto Loaded Cauliflower Colcannon with Bacon is a low-carb twist on a classic comfort dish, packed with smoky bacon, creamy cheese, and fresh herbs.

1 large head cauliflower, chopped into florets
6 slices thick-cut bacon
3 tablespoons unsalted butter
1/3 cup heavy cream
1/2 cup shredded sharp cheddar cheese
2 scallions, thinly sliced
2 cloves garlic, minced
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
Optional: 2 tablespoons chopped fresh parsley for garnish

Instructions

  • Steam or boil cauliflower florets until fork-tender, then drain.

  • Cook bacon in a skillet until crispy, then crumble and reserve 1–2 tablespoons of bacon fat.

  • Mash cauliflower with butter, cream, garlic, salt, pepper, and nutmeg until creamy.

  • Stir in cheese, crumbled bacon, and scallions.
