Crock Pot Beef Stew (High-Protein, Slow Cooker Classic) features tender beef, hearty vegetables, and rich broth slowly cooked for a comforting and protein-packed meal.
2 pounds beef chuck roast cubed
4 carrots sliced
3 medium potatoes cubed
1 medium onion chopped
3 cloves garlic minced
4 cups low-sodium beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
2 bay leaves
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon cornstarch optiona
Season beef with salt and pepper.
Sear beef in skillet if desired.
Place beef and vegetables in crock pot.
Mix broth, tomato paste, and Worcestershire sauce and pour over ingredients.
Add thyme and bay leaves.
Cook on low 7 to 8 hours or high 4 to 5 hours.
Thicken with cornstarch slurry if desired.
Remove bay leaves and serve warm.
Searing adds extra flavor but is optional.
Cook longer if beef is not tender.
Store leftovers refrigerated up to four days.
