2 English cucumbers sliced
2 cups cherry tomatoes halved
8 ounces fresh mozzarella balls or cubed
1/4 cup fresh basil leaves torn
2 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze optional
Salt to taste
Freshly ground black pepper to taste
Slice cucumbers and halve tomatoes.
Drain and cut mozzarella if needed.
Combine cucumber, tomatoes, and mozzarella in a bowl.
Add torn basil leaves.
Drizzle with olive oil and balsamic glaze.
