Garlic Butter Zucchini Skewers featuring tender grilled zucchini brushed with rich garlic butter and finished with fresh parsley.

Ingredients

3 medium zucchini cut into thick slices
3 tablespoons unsalted butter
3 cloves garlic minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley

Instructions

  • Preheat grill to medium heat.

  • Melt butter and stir in garlic and olive oil.

  • Thread zucchini onto skewers.

  • Brush with garlic butter and season.

  • Grill 8 to 10 minutes, turning occasionally.

  • Brush with extra butter and sprinkle with parsley.

  • Serve warm.

Notes

Soak wooden skewers in water before grilling to prevent burning.
