Garlic Butter Zucchini Skewers featuring tender grilled zucchini brushed with rich garlic butter and finished with fresh parsley.
3 medium zucchini cut into thick slices
3 tablespoons unsalted butter
3 cloves garlic minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
Preheat grill to medium heat.
Melt butter and stir in garlic and olive oil.
Thread zucchini onto skewers.
Brush with garlic butter and season.
Grill 8 to 10 minutes, turning occasionally.
Brush with extra butter and sprinkle with parsley.
Serve warm.
