Garlic gluten-free pizza bread is soft, cheesy, and perfectly garlicky with a crisp crust and melty top. A satisfying wheat-free twist on a classic favorite.
2¼ tsp instant yeast
1 cup warm water (110°F)
1 tsp sugar
2½ cups gluten-free flour blend (with xanthan gum)
1 tsp salt
2 tbsp olive oil
2 tbsp butter, melted
3 cloves garlic, minced
1 cup shredded mozzarella cheese
1 tsp dried oregano (optional)
In a bowl, mix warm water, sugar, and yeast. Let sit 5–10 minutes until frothy.
Add flour blend, salt, and olive oil. Mix until sticky dough forms.
Cover and let rise 45–60 minutes in a warm spot.
Preheat oven to 425°F with a pizza stone or heavy sheet inside.
Mix melted butter, minced garlic, and oregano.
On floured parchment, press dough into ¾-inch oval.
Brush garlic butter over dough, sprinkle cheese on top.
Transfer parchment and dough to hot baking surface.
Bake 18–22 minutes until golden and bubbly.
Cool 5–10 minutes before slicing.
Use dairy-free cheese and butter for a vegan version. Handle sticky dough with damp hands.
