2 cups gluten-free all-purpose flour blend
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon xanthan gum if not included in flour blend
1 cup plain Greek yogurt
2 tablespoons olive oil
3 cloves garlic minced
1 teaspoon dried Italian seasoning
1 1/2 cups shredded mozzarella cheese divided
Optional grated Parmesan
Preheat oven to 400°F and prepare a small baking pan.
Whisk flour, baking powder, salt, and xanthan gum.
Mix yogurt, olive oil, garlic, and herbs.
Combine wet and dry ingredients to form a soft dough.
Fold in most of the mozzarella.
Press dough into pan and smooth top.
Sprinkle remaining cheese over surface.
Bake 20 to 25 minutes until golden and set.
Cool 10 minutes before slicing and serving.
