Garlic Gluten-Free Pizza Bread is a soft, savory quick bread packed with garlic, herbs, and melted cheese, baked until golden and perfect for slicing and sharing.

Ingredients

2 cups gluten-free all-purpose flour blend
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon xanthan gum if not included in flour blend
1 cup plain Greek yogurt
2 tablespoons olive oil
3 cloves garlic minced
1 teaspoon dried Italian seasoning
1 1/2 cups shredded mozzarella cheese divided
Optional grated Parmesan

Instructions

  • Preheat oven to 400°F and prepare a small baking pan.

  • Whisk flour, baking powder, salt, and xanthan gum.

  • Mix yogurt, olive oil, garlic, and herbs.

  • Combine wet and dry ingredients to form a soft dough.

  • Fold in most of the mozzarella.

  • Press dough into pan and smooth top.

  • Sprinkle remaining cheese over surface.

  • Bake 20 to 25 minutes until golden and set.

  • Cool 10 minutes before slicing and serving.

Notes

Add marinara on top for extra pizza flavor.
Allow slight cooling before slicing for cleaner cuts.
Store leftovers in an airtight container.
