Greek chicken bowls are a healthy, flavorful meal featuring marinated grilled chicken, whole grains, fresh veggies, and creamy tzatziki. Perfect for meal prep or quick dinners.

Ingredients

lbs boneless, skinless chicken breasts or thighs
¼ cup olive oil
2 tbsp lemon juice
2 cloves garlic, minced
1½ tsp dried oregano
Salt and pepper, to taste
2 cups cooked brown rice or quinoa
1 cup cherry tomatoes, halved
1 cup cucumber, diced
½ red onion, thinly sliced
½ cup kalamata olives (optional)
Fresh parsley or dill, chopped

For the Tzatziki:
1 cup plain Greek yogurt
½ cup grated cucumber (squeezed dry)
1 clove garlic, minced
1 tbsp lemon juice
1 tbsp chopped fresh dill
Salt and pepper, to taste

Instructions

  1. Marinate chicken in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 30 minutes.

  2. Cook chicken in a hot pan or grill, 5–6 minutes per side, until done. Slice.

  3. Prepare grains and chop all vegetables.

  4. Mix tzatziki ingredients in a bowl and chill.

  5. Assemble bowls with grains, chicken, veggies, and a dollop of tzatziki.

  6. Garnish with herbs and serve or store for meal prep.

Notes

Use quinoa for extra protein or cauliflower rice for a low-carb version. For vegan bowls, use tofu and dairy-free yogurt.
