4 boneless skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
3 cloves garlic minced
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
2 cups uncooked long-grain white rice
1 red bell pepper sliced
1 zucchini sliced
1 carrot thinly sliced
Season chicken with salt and pepper.
Sear chicken in olive oil until cooked through and remove.
Sauté garlic in same pan.
Add broth and simmer.
