Healthy Street Corn Pasta Salad made with whole grain pasta, charred corn, Greek yogurt dressing, lime, cotija, and fresh herbs.

Ingredients

12 ounces whole grain pasta
2 cups corn kernels grilled or sautéed
1 cup plain Greek yogurt
1 tablespoon olive oil
2 tablespoons fresh lime juice
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 cup cotija cheese crumbled
1/4 cup red onion finely diced
1/4 cup fresh cilantro chopped
Salt to taste

Instructions

  1. Cook pasta until al dente. Drain and cool.

  2. Grill or sauté corn until lightly charred.

  3. Whisk Greek yogurt, olive oil, lime juice, chili powder, paprika, and salt.

  4. Combine pasta, corn, onion, and cilantro.

  5. Toss with dressing until evenly coated.

  6. Fold in cotija cheese.

  7. Chill 30 minutes before serving.

Notes

Add black beans or grilled chicken for extra protein. Garnish with extra lime and chili powder before serving.
