High Protein Slow Cooker Garlic Butter Beef Bites are tender chunks of beef slowly cooked in a rich garlic butter sauce for an easy and satisfying dinner.
2 pounds beef chuck roast or stew meat, cubed
4 tablespoons unsalted butter
5 cloves garlic, minced
1 cup beef broth
1 tablespoon soy sauce
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon dried thyme
2 tablespoons chopped fresh parsley
Cut beef into bite-sized cubes and pat dry.
Optional: Sear beef in a hot skillet until lightly browned.
Place beef in the slow cooker and sprinkle with seasonings.
Add garlic, butter, beef broth, and soy sauce.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
Stir during the last 30 minutes and adjust seasoning if needed.
Garnish with fresh parsley and serve warm.
Searing the beef adds deeper flavor but is optional. For thicker sauce, add a small cornstarch slurry during the final cooking stage.
