Irish Colcannon Recipe (with Bacon) – Olivia’s Cuisine featuring creamy mashed potatoes blended with tender cabbage and crispy bacon in a traditional Irish side dish.

Ingredients

2 pounds Russet or Yukon Gold potatoes peeled and chopped
4 slices thick-cut bacon chopped
3 cups finely shredded green cabbage
4 tablespoons unsalted butter divided
1/2 to 3/4 cup warm whole milk
3 green onions sliced
1 teaspoon salt
1/2 teaspoon black pepper

Instructions

  • Boil potatoes in salted water until tender.

  • Cook bacon until crisp and set aside.

  • Sauté cabbage in butter and a small amount of bacon fat until softened.

  • Drain potatoes and mash until smooth.

  • Stir in warm milk and remaining butter.

  • Fold in cabbage, bacon, and green onions.

  • Season with salt and pepper and serve hot.

Notes

Warm the milk before adding to keep the mash smooth and creamy.
