Irish Colcannon Soup transforms traditional mashed potatoes and cabbage into a creamy, comforting Irish-inspired soup.

Ingredients:
2 pounds Yukon Gold potatoes peeled and diced
3 cups shredded green cabbage
1 small onion chopped
2 cloves garlic minced
3 tablespoons unsalted butter
4 cups chicken or vegetable broth
1 cup whole milk or light cream warmed
3 green onions sliced
1 teaspoon salt
1/2 teaspoon black pepper
