Irish Potato Pie is a comforting baked dish featuring layers of tender potatoes and onions inside a buttery pastry crust.

Ingredients

2 cups all-purpose flour
½ teaspoon salt
½ cup cold butter, cubed
½ cup cold water
4 medium potatoes, thinly sliced
1 large onion, thinly sliced
2 tablespoons butter for layering
¼ cup milk
½ teaspoon black pepper

Instructions

  • Mix flour and salt and cut in cold butter until crumbly.

  • Add cold water gradually to form dough and chill 30 minutes.

  • Roll half the dough and place in a pie dish.

  • Layer potatoes and onions with butter, salt, and pepper.

  • Pour milk over the layers.

  • Cover with remaining dough and seal edges.

  • Cut slits in the top crust and bake at 375°F for 45–50 minutes.

Notes

Allow the pie to rest briefly after baking so the filling settles before slicing.
