Irish Potato Pie is a comforting baked dish featuring layers of tender potatoes and onions inside a buttery pastry crust.
2 cups all-purpose flour
½ teaspoon salt
½ cup cold butter, cubed
½ cup cold water
4 medium potatoes, thinly sliced
1 large onion, thinly sliced
2 tablespoons butter for layering
¼ cup milk
½ teaspoon black pepper
Mix flour and salt and cut in cold butter until crumbly.
Add cold water gradually to form dough and chill 30 minutes.
Roll half the dough and place in a pie dish.
Layer potatoes and onions with butter, salt, and pepper.
Pour milk over the layers.
Cover with remaining dough and seal edges.
Cut slits in the top crust and bake at 375°F for 45–50 minutes.
Allow the pie to rest briefly after baking so the filling settles before slicing.
