Mediterranean Chicken Pasta Salad combines tender pasta, grilled chicken, fresh vegetables, olives, and feta tossed in a light lemon olive oil dressing.

Ingredients

12 ounces rotini or penne pasta
2 cups cooked chicken breast, diced
1 cup cherry tomatoes, halved
1 cup diced cucumber
½ cup Kalamata olives, sliced
¼ cup thinly sliced red onion
½ cup crumbled feta cheese
2 tablespoons chopped fresh parsley

For the dressing:
⅓ cup olive oil
2 tablespoons lemon juice
1 clove garlic, minced
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper

Instructions

  • Cook pasta according to package instructions until al dente.

  • Drain and allow pasta to cool completely.

  • Chop chicken, tomatoes, cucumber, and onion.

  • Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.

  • Combine pasta, chicken, vegetables, and olives in a large bowl.

  • Toss with dressing until evenly coated.

  • Fold in feta and parsley.

  • Refrigerate 30 minutes before serving.
