Quick, healthy sautéed vegetables including broccoli, bell peppers, carrots, zucchini, and red onion, flavored with garlic, olive oil, and fresh herbs.

Ingredients

2 cups broccoli florets
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 medium carrot, thinly sliced
1 medium zucchini, sliced into half-moons
1 small red onion, thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
Salt and black pepper, to taste
1/4 teaspoon red chili flakes (optional)
1 tablespoon lemon juice
Fresh parsley, chopped, for garnish

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add garlic and onions; sauté 1–2 minutes until fragrant.
  • Add carrots and broccoli; sauté 3–4 minutes.
  • Add bell peppers and zucchini; cook 3–4 minutes until tender-crisp.
  • Add thyme, salt, pepper, and optional chili flakes; toss well.
  • Drizzle lemon juice over vegetables and toss.
  • Remove from heat; garnish with parsley and serve.

Notes

Avoid overcrowding the pan; use seasonal vegetable variations; can add chickpeas or tofu for protein.
