Grilled Sausage & Shrimp Kabobs with colorful vegetables and a savory lemon-garlic marinade.
1 pound large shrimp, peeled and deveined
12 ounces smoked sausage, sliced
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 small red onion, cut into pieces
1 small zucchini, sliced
3 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh parsley, chopped
Skewers
Preheat grill to medium-high heat.
Mix olive oil, lemon juice, garlic, paprika, salt, and pepper.
Toss shrimp, sausage, and vegetables in the marinade.
Thread ingredients onto skewers alternating pieces.
Grill for 8–10 minutes, turning every few minutes.
Remove when shrimp are pink and sausage is browned.
Sprinkle with fresh parsley and serve warm.
Soak wooden skewers before grilling. Pineapple or mushrooms can replace some vegetables for variation.
