Colcannon is a traditional Irish dish made with creamy mashed potatoes blended with sautéed cabbage or kale, butter, and green onions for a comforting side.
2 pounds Yukon Gold or Russet potatoes
3 cups finely shredded green cabbage or chopped kale
4 tablespoons unsalted butter
3/4 cup whole milk warmed
3 green onions sliced
1 teaspoon salt
1/2 teaspoon black pepper
Boil potatoes until fork-tender and drain well.
Sauté cabbage or kale in butter until softened.
Add green onions and cook briefly.
Mash potatoes with butter and warm milk.
Fold in sautéed greens.
Season and serve warm.
Use warm milk for smoother mash.
Drain potatoes thoroughly before mashing.
Add bacon for extra richness if desired.
