Ingredients

2 tablespoons granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 1/4 cups milk
2 large eggs
3 tablespoons melted butter plus extra for brushing
1 teaspoon vanilla extract
1/2 cup granulated sugar for coating
1 tablespoon ground cinnamon

Instructions

  • Whisk flour, sugar, baking powder, and salt in a bowl.

  • In another bowl whisk milk, eggs, melted butter, and vanilla.

  • Combine wet and dry ingredients until just mixed.

  • Heat greased skillet over medium heat.

  • Cook 1/4 cup batter per pancake until bubbles form, flip and cook until golden.

  • Brush warm pancakes with melted butter.

  • Mix cinnamon and sugar and coat pancakes on both sides.

  • Serve warm.

Notes

Do not overmix batter.
