Spinach and Feta Pinwheels are flaky pastry spirals filled with savory spinach, feta cheese, and herbs inspired by classic Greek spanakopita.
1 sheet puff pastry, thawed
2 cups fresh spinach, chopped
1 tablespoon olive oil
2 cloves garlic, minced
¾ cup crumbled feta cheese
¼ cup cream cheese, softened
2 tablespoons chopped fresh dill or parsley
½ teaspoon salt
½ teaspoon black pepper
Heat olive oil in a skillet and cook garlic briefly.
Add spinach and cook until wilted, then cool slightly.
Mix spinach with feta, cream cheese, herbs, salt, and pepper.
Roll puff pastry into a rectangle and spread filling evenly.
Roll pastry into a log and chill for 15 minutes.
Slice into rounds and place on a baking sheet.
Bake at 375°F for 18–22 minutes until golden.
