2 pounds potatoes, cubed
3 tablespoons olive oil

¼ teaspoon black pepper
Boil cubed potatoes in salted water for 12–15 minutes until tender.
Drain potatoes and allow them to cool slightly.
Whisk olive oil, lemon juice, garlic, sumac, salt, and pepper.
Place potatoes in a bowl with onion and herbs.
Pour dressing over the potatoes and toss gently.
