2 pounds Yukon Gold potatoes, peeled and cut into chunks
4 tablespoons unsalted butter
3/4 cup whole milk, warmed
3 cups green cabbage, finely shredded
4 green onions, sliced
1 clove garlic, minced (optional)

1/2 teaspoon black pepper

Boil potatoes in salted water for 15–20 minutes until fork-tender, then drain well.
