Ultimate Creamy Colcannon Recipe is a traditional Irish dish made with mashed potatoes, sautéed cabbage, butter, and milk for a rich, comforting side.

2 pounds Yukon Gold potatoes, peeled and cut into chunks
4 tablespoons unsalted butter
3/4 cup whole milk, warmed
3 cups green cabbage, finely shredded
4 green onions, sliced
1 clove garlic, minced (optional)
1 teaspoon salt
1/2 teaspoon black pepper
Extra butter for serving

Instructions

  • Boil potatoes in salted water for 15–20 minutes until fork-tender, then drain well.

  • Sauté cabbage in butter for 6–8 minutes until soft. Add garlic and green onions, cook briefly.

  • Mash potatoes until smooth. Add butter and warm milk, mixing until creamy.

  • Fold in cabbage mixture and season with salt and pepper.

  • Serve hot with extra butter on top.
