Vegan Irish Colcannon (Veggie & Potato Side Dish) featuring creamy mashed potatoes blended with sautéed cabbage and green onions in a dairy-free version of the classic Irish favorite.
2 pounds Russet or Yukon Gold potatoes peeled and chopped
3 cups finely shredded green cabbage or chopped kale
3 tablespoons dairy-free butter
1/2 to 3/4 cup unsweetened plant milk warmed
2 green onions sliced
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Boil potatoes in salted water until tender.
Sauté cabbage or kale in olive oil until softened.
Drain potatoes and mash until smooth.
Stir in warm plant milk and dairy-free butter.
Fold in greens and green onions.
Season with salt and pepper.
Serve hot.
