Vegan Irish Colcannon (Veggie & Potato Side Dish) is a dairy-free twist on the traditional Irish classic made with creamy mashed potatoes and sautéed cabbage or kale.
2 pounds Yukon Gold or Russet potatoes
3 cups finely shredded green cabbage or chopped kale
4 tablespoons vegan butter divided
3/4 cup unsweetened plant-based milk warmed
3 green onions sliced
1 teaspoon salt
1/2 teaspoon black pepper

Use oat milk for creamier texture.
Drain potatoes thoroughly before mashing.
Add leeks for extra flavor if desired.
