Juicy grilled chicken marinated in lemongrass, garlic, and fish sauce, then charred to perfection. A fast, flavorful Vietnamese favorite ideal for any meal.

Ingredients

lbs boneless chicken thighs or breasts
3 tbsp finely minced lemongrass
2 cloves garlic, minced
1 shallot, minced
2 tbsp fish sauce
1 tbsp soy sauce (or tamari)
1 tbsp brown sugar (or substitute)
Juice of 1 lime
1 tbsp neutral oil

Instructions

  • Mix marinade ingredients in a bowl or bag.

  • Add chicken and marinate 15–60 minutes.

  • Preheat grill or pan to medium-high heat.

  • Grill chicken 5–6 minutes per side until cooked through.

  • Rest 5 minutes, then slice and serve with garnishes.

Notes

Sub lemongrass paste if needed. Use tamari for gluten-free. Best with rice or noodle bowls.
